It was Megan’s 14th birthday recently and what better way to celebrate than with a family get-together, smoked pork smothered in herbs we brought in Corfu and loukoumades? Loukoumades are delicious bite-sized fluffy doughnut balls that are deep fried until golden and crispy. Traditionally served soaked in honey syrup, sprinkled with cinnamon, and garnished with chopped walnuts.  David likes to mix it up a bit and served these with Greek yoghurt and pistachio nuts.

Loukoumades are actually really easy to make. David underestimated how much the mixture would rise and we had a crazy amount that we made a second batch the next day. I think the loukoumades mixture really benefits from sitting longer than an hour. But either way, they are delicious!

Ingredients:
For The Loukoumades Traditional Greek Doughnuts

Mixture:

  • 1 cup of lukewarm water (240g/8.5 oz)
  • 1 cup of lukewarm milk (240g/8.5 oz)
  • 15g active dry yeast (0.5 oz)
  • 2 cups flour (450g/16 oz)
  • 2tbsps sugar
  • 1 flat tsp salt
  • 4tbsps olive oil
  • vegetable oil for frying

To Garnish:

  • 3/4 cup honey 350g/13 oz
  • cinnamon powder
  • chopped walnuts

How To Make Loukoumades Traditional Greek Doughnuts At Home:

  1. In a bowl add the water, sugar and yeast. Stir with a whisk until the yeast dissolves completely and wait for 5 minutes. Add the rest of the ingredients for the dough and whisk at high speed until the mixture becomes a smooth batter.
  2. Cover the bowl with grease-proof paper and leave in a warm place for an hour or so and let the dough rest and rise. (David used a tea towel, the mixture rose so much it was weeping down the bowl and ruined the tea towel, lesson learned!)
  3. Using a pan of your choice pour in enough vegetable oil to deep fry the loukoumades. Heat the oil on medium heat until hot. Test if the oil is hot enough by dipping in some of the dough for the loukoumades. If it sizzles the oil is ready.
  4. Using two spoons, drop a spoonful of the mixture into the hot oil. Use a slotted spoon to push the loukoumades into the oil, turning them on all sides, until golden brown, then place on some kitchen paper to drain. Repeat with the rest of the dough.
  5. Serve drizzled with honey, sprinkled with cinnamon and chopped walnuts, yummy!
